This is one of my favorites (and my toddlers!). It is delish, sweet, and can be modified for healthier needs.
1 cup white sugar & 1 cup brown sugar
2 TBSP brown sugar reserved for the end
1 .5 cup veggie oil
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg
1/4 cup orange or lemon juice
3 cups flour (I usually use 1 cup white flour to 2 cups spelt flour to keep it healthier and give it a nutty taste)
1 TBSP ground cinnamon
1 TBSP vanilla extract
2 apples peeled & chopped into small pieces
2 apples peeled & chopped into slices (as per picture)
1 cup chopped walnuts or pecans
Optional: 1 cup shredded coconut
Butter for greasing and flouring the pan
-Preheat oven to 165 C. Grease and flour a round pan (tube and preferably detachable base).
-In a large bowl, and using a mixer, combine liquids + sugar: eggs, oil, sugar, orange juice, vanilla extract.
-Mix dry ingredients separately in a bowl by sifting (if using wholemeal spelt flour, don’t sift as bigger granules are part of the flour): salt, cinnamon, flour, baking soda and powder, and nutmeg.
-Mix all together gradually and add pecans (or walnuts), coconut shavings, and the small pieces of apples.
-In the pan, arrange apple slices round the the tube, sprinkle 2 TBSP of brown sugar, then fold the batter in. Let it set by tapping the pan to prevent air bubbles. Please in the oven.
-Bake for 1:15 min to 1:30 min depending on your oven. Insert a tooth pick, if it comes out clean then your cake is ready. Cool for 10 to 15 min before removing from pan.
