this is one of my favorite recipes. mainly because i can serve it to the whole family including my 9 month old baby. it’s quick and requires minimal preparation. not to mention the extraordinary nutrients & vitamins packed in this mouth-watering meal.
Prep & roast time : 1 hour marinade, 20 min roast
1 TBSP sunflower oil
1 TBSP light soy sauce
2 tsp clean honey
2 tsp whole grain mustard
grated zest & juice of 1 lemon
2 skinless salmon fillets
1 large garlic clove crushed
200 grams fresh baby leaf spinach
2 TBSP virgin olive oil
pinch of chili flakes (don’t add if for baby)
1 can (14 oz) butter beans, rinsed and rained (& boiled if hard)
prepare the marinade by mixing together in a shallow tupperware the sunflower oil, mustard, honey, soy sauce, and 1 TBSP lemon juice. Salt the salmon and coat with marinade. Seal and leave in the fridge for 30 min if in a hurry, or a few hours/overnight.
heat the olive oil, add garlic, chili flakes, and remaining lemon juice and zest, as well as the butter beans. Cook gently for a few minutes. Set aside.
wilt the spinach. You can either spray it with hot water from tap through a colander or wilt it in a frying pan with a splash of water. Set aside.
pre-heat the oven to 200 C and place the salmon in a roasting pan in the oven for 15 to 20 minutes.
finally mix the spinach and beans while gently heating them. Place them on a plate, and top them with the salmon. Serve immediately.
