A constant in our kitchen. this is the moistest banana cake u WILL EVER have! 🙂 packed with potassium, made out of spelt flour, & loaded with walnuts & dark chocolate. satisfy ur cravings guiltfree ! remember, you need to be precise with measurements to get the best result.
baking & prep time: 60 & 15 minutes
Ingredients
2 eggs
1/2 cup dark chocolates chips (Hershey’s are the best!)
2 cups spelt flour
1/2 tsp vanilla essence
1 tsp baking powder
1 tsp salt
1 tsp Sodium bicarbonate (baking Soda)
1/2 cup white sugar
1/2 cup brown sugar (you can add more if you have a sweet tooth!)
113 grams butter cut into cubes and softened at room temperature for minimum 20 min.
1/2 cup walnuts
3 to 4 ripe bananas
1 TBSP milk
method

mash bananas in a bowl (you can use potato masher)

beat, using a mixer, the sugar and butter together until fluffy. Stop before it melts.

add the bananas, vanilla, and milk by mixing with a spatula (not mixer). Then crack one egg at a time.

add walnuts and chocolates chips.

preheat oven to 165C (325 F). Remember you may have to bake for longer or shorter depending on your oven size and type. A good test is to insert a toothpick 10 minutes before the mentioned time and see if it comes out clean. If it does, your cake is ready!

finally add all dry ingredients slowly while you whisk using the spatula.

prepare a loaf pan by greasing using butter and then line it with baking parchment as show in the pictures below.

bake for 50 to 60 minutes.
