To Die for All-in-One Pizza

*This recipe yields two round pizzas or you can make them into mini pizzas
prep & Cook time: 1 hour resting time, plus 45 minutes.
Ingredients for base:
1 1/2 tsp quick yeast
1/4 tsp sugar
450 g / 1 lb all purpose plain flour (no self-raising)
2 tbsp olive oil
1 tsp salt
optional- breadcrumbs
Toppings:
marinara sauce: 1 can chopped tomatoes, 1 1/2 TBSP tomato paste, 1 TSP oregano, 1 TSP basil, 2 TSP sugar, 1 TBSP salt, 1 garlic clove, 1/2 onion chopped finely
1 1/2 cup mozzarella cheese
1/2 cup Parmesan cheese (optional)
20 pitted and cut black olives into rings (or green)
1 cup mushrooms chopped
1 cup chopped into rings green bell-peppers
1 cup lightly fried and spiced minced beef or ready deli pepperoni
Method:
  1. Mix the yeast in a bowl with about 1/3 cup lukewarm (not boiling) water and sugar.
  2. Add the olive oil, flour, and salt then knead to a pliable dough, adding the prepared warm water slowly while you knead. Add extra warm water if the dough is too dry.
  3. Cover with cling film in a greased (with oil) glass bowl and leave to rise in a warm place for about 1 hour. You can leave it for longer if you have time.*
  4. Prepare the marinara sauce: heat 1 TBSP olive oil in a pot on medium heat, add onions and cook until translucent, add crushed garlic, all the herbs, sugar, and tomato paste. Finally add the tomato can, allow to boil then simmer for 20 minutes.
  5. Preheat oven to 220C (Gas Mark 7/425F)
  6. Divide dough into two balls, roll out on a lightly floured surface into circles, leaving the edges a little thicker.
  7. grease the pizza pans and spread breadcrumbs on top (this gives it a crunchy texture).
  8. Spread the dough, optional: stuff the crust with cream cheese by pushing the dough with your fingers against the pizza pan, spreading the cheese, then rolling the sides to close them. Here is a picture of how it will look like:

  9. Spread the marinara, place the all toppings, and finally spread cheese and drizzle oil on top and on the crust.
  10. bake in the preheated oven for about 20 minutes.
*I do a little trick when it’s cold, turn on the oven for 2 minutes on very low heat then turn it off and put the bowl in.
